Thai Broiled Salmon with Avocado Basil Cream Sauce
A salmon fillet marinated in Asian flavors with a creamy avocado and basil sauce. The avocado in Asian countries is called, "butter fruit."
Admittedly, this is a dish very much like the Kitchen Tapestry recipe for Miso Glazed Salmon with Chinese Butter Fruit Dressing, and the titular ingredients are similar; but the flavor profiles are different and this is recipe is more simply prepared.
Thai Seasonings of Cilantro, Ginger Root, Lemongrass, Chili Peppers
Were it not for a product available in the market these days, called Gourmet Garden, you would have to grind a paste from lemongrass, cilantro, ginger root and chili peppers to get the flavor for this recipe. I use their products to keep basil and cilantro in my kitchen for those times when I do not have the product or the time to prep from fresh. For this recipe, I use their Thai Seasoning Stir-In Paste as in integral part of the marinade for the salmon.
The marinade is therefore very simple and marries with the salmon perfectly, which is simply broiled. The Avocado Basil Cream Sauce became a stand-alone recipe on Kitchen Tapestry, but was actually created for this dish. It is posted below for convenience.
Thai Broiled Salmon with Avocado Basil Cream Sauce

Ingredients
- 4 6-oz fresh salmon filets, skinned
- 4 tbsp Thai seasoning paste (like, Gourmet Gardens)
- 6 tbsp rice vinegar
- 2 tbsp oyster sauce (like, Panda)
- 2 tbsp dark soy sauce
- 4 tbsp dry white wine
- 2 tbsp lime juice
- 1 tbsp dried orange peel
- 1 tbsp honey

- non-stick cooking spray (like, Pam)
Instructions
- In a small mixing bowl, add the Thai seasoning paste, rice vinegar, oyster sauce, dark soy sauce, white wine, lime juice, dried orange peel, and the honey and whisk to combine.
- Place your salmon filets in a zip-lock bag and pour in the marinade. Remove as much air as possible from the bag allowing the fish to come completely in contact with the marinade.
- Seal well and refrigerate for three hours.
- Remove salmon from the zip-lock bag and discard the marinade.
- Spray a broiled pan with the non-stick spray, and broil the salmon about 8" from the broiler on high heat.
- Broil for 8 minutes without turning. The salmon should be brown and bubbly on top with a bit of char.
Avocado Basil Cream Sauce

Ingredients
- 1 large, ripe avocado, peeled and pit removed
- juice of 1/2 fresh lemon
- 1/4 cup heavy cream
- 1/4 - 1/2 cup basil infused olive oil
- 1/2 cup fresh basil, rough chopped
- 1 tsp minced garlic
- 1/8 tsp fine sea salt
- 7-8 grinds freshly cracked black pepper
Instructions
- Cut the avocado into chunks, then place all of the ingredients except the oil in a food processor.
- Pulse the food processor several times to combine the ingredients.
- Running on low speed, pour in the olive oil until you have reached your desired thickness. You want the sauce to have the consistency of a creamy salad dressing.
- Allow the dressing to sit at room temperature for an hour before using.
Notes
- Add 1/4 cup white wine vinegar to make an Avocado dressing for salads.
- If you do not have basil infused olive oil, use plain extra virgin olive oil or avocado oil.
