Salsa Fresca
A simple, fresh, authentically Mexican salsa that has many uses as a dipping sauce or relish to accompany grilled meats or fish and as a topping for other dishes.
Simple but fresh ingredients make this recipe authentically Mexican, which was originally created for the Kitchen Tapestry recipe of Mexican Stewed Cranberry Beans with Shredded Pork and Salsa Fresca, but great as a salsa for dipping tortilla chips.
Salsa Fresco

Yield: 2-1/2 cups
A simple, fresh, authentically Mexican salsa that has many uses as a dipping sauce or relish to accompany grilled meats or fish and as a topping for other dishes. This salsa was specifically made for the Kitchen Tapestry recipe for Mexican Stewed Cranberry Beans with Shredded Pork & Salsa Fresca.
Ingredients
- 3-4 medium ripe red tomatoes, cored and finely diced
- 1/3 medium red onion, finely minced
- 1/4 cup fresh cilantro, chopped
- 1 medium jalapeño pepper, stemmed, seeded and finely minced
- 2 tbsp red wine vinegar
- 2 tbsp olive oil
- 1 tsp fine sea salt
Instructions
- Mix all the ingredients together in a mixing bowl.
- Allow to stand at room temperature for 1 hour while the flavors blend together.
- Use a slotted spoon to transfer the salsa to a serving bowl, leaving the liquid behind.
