I truly think that the Pork Shoulder Roast, also known as the Boston Butt, may be the most versatile cut of meat from any source. That's a bold statement, but it seems to me that the pork shoulder lends itself well to almost any kind of flavor import - Jamaican, Hawaiian, Barbecue, Greek; the list goes on. There’s a reason why pork is second only to chicken as the most consumed animal protein on the planet, and it’s a very close second at that. This is an even more astounding statistic when you consider a couple billion people on this planet will not consume pork for religious reasons.
I realize that there are cuts of beef that offer similar versatility, but beef is, well, beef. At the end of the day, all beef recipes are more or less designed to enhance and augment the flavor of the beef itself, whereas the pork shoulder is happy to remain in the background, and will let the seasonings and inbound flavors take center stage. Perhaps that's why I have more pork shoulder recipes than about anything else.
Incidentally, why is a pork shoulder, which comes from the upper part of the front leg of the hog, called a Boston Butt since it does not come from the rear of the animal?
The term "Boston Butt" for a pork shoulder roast has historical roots. The name originated in the 18th Century in New England, particularly Boston, where pork was often stored and transported in large barrels called "butts." Over time, the term Boston Butt stuck. The name reflects the way the meat was packaged rather than the actual location of the cut of meat from the hog.
