Sausage & Cheese Brunch Casserole

A quick, convenient and hearty egg, sausage and cheese casserole.

I normally don't pay a lot of attention to recipes on the back of packages of food, however, my Number One Fan called my attention to this one on the back of a package of Kraft Shredded Three-Cheddar Cheese. I have to admit, it was devilishly simple and the results were sublime. I modified the cooking times and temperatures to accommodate my oven, and added to the recipe that the tomatoes be sautéed before adding to the dish. It’s a two-step process where you must allow the egg mixture to set before adding the tomatoes, sausage and cheese.

Ingredients

  • 12 large eggs
  • 1 lb bulk sausage (like, Jimmy Dean Hot)
  • 1/3 cup sour cream
  • 8 oz shredded cheddar cheese (like, Kraft Three-Cheddar)
  • 2 medium tomatoes, diced
  • 1 medium yellow onion, diced
  • 1 4.5-oz can sliced mushrooms (like, Green Giant)
  • 1 tbsp butter
  • non-stick cooking spray (like, Pam Butter-Flavored)

Instructions

  1. Pre-heat the oven to 425°F.
  2. Crack the eggs in a large mixing bowl and whisk in the sour cream. Blend well.
  3. In a large skillet with a lid and over medium high heat on your stovetop, crumble and sauté the sausage until browned.
  4. Add the onions and sauté until they are translucent, but not browned.
  5. Add the mushrooms and sauté 2 minutes to heat through.
  6. Put a lid on the sausage mixture and keep warm over low heat.
  7. In a separate skillet over medium high heat, melt the butter, and then sauté the tomatoes until they have collapse, 7-8 minutes.
  8. Grease a 9"x13" baking dish with the non-stick cooing spray and pour in the egg and sour cream mixture. Put in the oven for 10-15 minutes until the eggs set. You can tell this by jiggling the baking dish slightly. If the mixture moves, the eggs are not set. You might notice that the egg mixture might curl upwards at the corner of the baking dish and this is normal.
  9. When the eggs have set, remove the baking dish from the oven and turn the temperature down to 350°F.
  10. Add a layer of tomatoes on top of the eggs, then add the sausage-onion-mushroom mixture, then the cheese.
  11. Pop back in the oven for 30-35 minutes until the cheese is brown and bubbly.
  12. Allow to sit for a few minutes before dishing up.

Notes

  • If you're cooking in altitudes above 5,000 feet, add 5-10 minutes to the cooking times, and increase the oven temperature for the second step to 360°F.
