Indian Cucumber Salad
Intended as a palate refresher to sooth the tongue after a spicy bite of South Asian Curry, so this is also ideal with Cajun dishes, spicy barbecue and other fiery recipes.
Simple as it is, this is a true Indian recipe designed as something cool and soothing to accompany hot, spicy Indian Curry. It's refreshing and great against heavy beef dishes or recipes with a heavy cream base, like the Kitchen Tapestry recipe for Chicken Curry.
A Trio of Summertime Cucumber Salads - Indian Cucumber Salad

Yield: 4 Salads
Because this is a simple dish with relatively few ingredients, you must use fresh lemon juice and fresh chopped dill.
Ingredients
- 2-3 American Slicing Cucumbers, peeled or not as you prefer
- 1/3 cup fresh dill, finely chopped
- 1 tsp garlic, minced
- 1/2 tsp fine sea salt
- 7-8 grinds freshly cracked black pepper
- juice of 1/2 fresh lemon
- 2 tbsp extra virgin olive oil
Instructions
- Using a mandolin, slice the cucumbers into matchsticks.
- Place the cucumber sticks into a mixing bowl. Sprinkle the fresh dill, minced garlic, lemon juice, olive oil, ground pepper on top and mix well.
- Chill for a half-hour.
- Add the sea salt at the last minute, then mix one last time before serving.
